Hi, i am your nutrionist Nisha welcome to Tarla Dalal’s kitchen Today, i am going to share a recipe with you which is a diabetic friendly snack. this snack i am going to make with soya flour, named Soya sesame khakra you no why i have chosen soya flour to make the khakra because soya flour contains isoflavins which helps to control the blood glucose level in our body not only blood glucose, it also helps to control cholesterol and helps in weight loss So, lets start making the khakra First will make dough for khaklra we cannot make khakra with only soya flour, so will add nutritious wheat flour with these four ingredients, i will make the khakra Usually lot of ghee and oil is used while making the dough or while making the khakra a lot of ghee or oil is used but i am not going to use any of these, i am going to make fat free khakra mix the flour well add very little water, and knead into a firm dough the dough is ready now remember to knead the dough very well now, cover the dough with a lid and keep aside for 10 to 15 minutes after 10 to 15 minutes, knead the dough again as there is no oil used in this dough.
and kneading will help to make the dough smooth divide the dough into 6 equal portions now will start rolling the khakra take one portion of the dough, and flatten it between you palms dust little flour, and roll into very thin circle.
As there is soya flour and wheat flour, it is not very difficult to roll. but it is very important to roll into very thin circle place it on a hot griddle, and cook it slightly remember to keep the flame very slow one side is cooked, turn it and cook the other side slightly to make the crisp khakra, its very important to cook on a slow flame its time consuming, but its very important again turn it, and cook the other side, with the help of a khakra press press from all the sides to cook it evenly again turn the other side, and repeat the same procedure.
