Bengali hotel style vegetable at first,preparing the vegetables 1 cup cubic cut papaya, 1cup cauliflower, 10-12 cloves garlic, 1 cup cubic cut carrot, 1 cup cucumber 1 cup sweet pumpkin, pointed gourd 1 cup, 1cup potato soaked into water will soak this pulse (chickpea) into water for 1 hour.
taking all the vegetables in a pan adding 1/2 cup chopped onion adding 5-6 green chili adding 1 tea-spoon salt 1 tea-spoon coriander powder 1/2 tea-spoon cumin powder 1/4 tea-spoon turmeric powder adding 1 tea-spoon zinger paste and 1 tea-spoon garlic paste adding 1/2 cooking oil now mixing all the ingredients very well now adding water and water level would not beyond vegetables level now turning on stove and heat would be full after that will lid the pan and wait for 5 min opening the lid and stir a little bit.
will repeat this steps for couple of times adding 1/4 cup oil in a pan after heating oil, going to add 3 bay leaves adding 5 red chili on the other hand, will chop the garlic cloves like this way adding 1/4 cup chopped onion adding chopped garlic at this stage, adding 1/2 tea-spoon cumin and 1 tea-spoon of 5 spices now adding some cooked vegetables in it and immediately lid the pan will wait for 1 min after 1 min shake it like this way after that, will open the lid and mix rest of the vegetables lid the pan and wait for 2 min.
at this stage, adding coriander leaves mixing it again again lid the pan and wait for 2 min it’s done. now turn off the stove. after turning off the stoves, have to keep it on the stove for 5 min without opening the lid.
