Hello, welcome to my channel. Today we are going to make a vegetarian recipe, ‘Malai Kofta’ So let’s get started with this recipe. Heat up a pan and add 2 tbsp olive oil. You may use a different oil of your choice.
Add a little butter. Let the butter melt. Add 1 tsp cumin seeds. Add the dry spices (small cinnamon stick, 4 cloves, 4 peppers, and 2 cardamoms) Saute for 20 seconds. Add 2 chopped onions. Saute for a minute.
Add 2 green chilies. 7-8 cloves of garlic and 1½ inch ginger Mix well. Add 2 chopped tomatoes. Add 1 tsp salt ½ tsp turmeric powder ½ tsp cumin powder 1 tsp coriander powder Mix it well. Add 1 tsp powdered sugar about 20 cashew nuts.
and 1 tsp red chili powder Mix all these well and cook until tomato becomes soft Now it’s done, set it aside to cool To make the koftas, take 3 boiled potatoes and grate 250g paneer. add two chopped green chilies ½ tsp cumin powder ½ tsp coriander powder ½ tsp red chili powder ½ tsp salt and 1 tbsp chopped fresh coriander leaves mash and mix all the ingredients add 4 tbsp corn flour mix it well take a small amount in hand and roll it to make small balls out of it we have made the balls from the mixture let’s prepare to fry them heat up the oil, keeping the flame in medium don’t let it get too hot fry the koftas in medium flame until they turn golden the koftas are done and have a nice golden color take them out on a plate all the koftas are fried now let’s move on to make the gravy for it the mixture has cooled down.
take it out into the grinding jar grind it to make a smooth paste add some butter in the same pan then add the gravy paste cook for 2-3 minutes add 1 tsp garam masala and some kasuri methi (dried fenugreek leaves) turn off the stove and let it cool for about a min then add 250ml full-fat milk turn on the stove and keep in low flame mix it well you may use fresh cream instead of the milk but note that the quantity should be less the gravy is done here.
