First wash the basmati rice with water neatly. Add 1 glass of water in the washed basmati rice and soak it for ½ an hour. By soaking the rice will get cooked quickly and it will become long. Take 1 mixie jar and add 4 pcs of green chilli in it.
Similarly add nicely washed and chopped coriander and mint leaves. Add sufficient water in between and grind the fone paste out of it. After grinding the coarse paste of mint leaves, coriander leafs and green chili into a bowl.
Take 1 deep bowl, place it over the stove and light it. Once the bowl gets hot add 4 table spoons of ghee in it. Ghee is optional instead if ghee we can use oil or butter. By adding ghee the pudina(mint) rice will be tasty.
Once the ghee gets hot add the garam masala spices 1 by 1. Add 4 pcs of cardamom. Add 4 pcs of marathi buds. Add 4 – 5 pcs of cloves. Add 2 pcs of Star anise. Add 2 small pieces of chinnamon stick’s. Add ¼ Tea spoon black pepper.
Fry these garam masala spices till we get nice fragrance from them. Once the spices get fried add ginger garlic paste in it. Fry the mixture till the raw smell of ginger garlic paste goes off. Now add cashew nuts and fry them.
cashew nuts are optional. After frying the cashew add fine chopped onion pieces in it. Fry the onion pieces along with the other spices by stirring them nicely. Once the onion gets fried slightly add the chopped carrot and potato pieces also.
We can prepare pudina(mint) rice without vegetables also. But if we add carrot and potato the pudina(mint) rice will be very tasty. After mixing the vegetables place the lid over the pan and cook them for some time.
Adjust the flame to medium flame. After 2 minutes remove the lid from the pan and mix the onion mixture nicely. Add sufficient salt to the vegetables as per the taste. Similarly add ¼ tea spoon turmeric powder.
By adding salt in the beginning the water will get release from the vegetables and they get cooked quickly. After mixing the salt & turmeric nicely to the onion mixture nicely place the lid over the pan and cook.
After 3 minutes if we remove the lid from the pan and see the vegetables got cooked nicely. Now add the grinded green chilli, mint & coriander leaves paste in it. After mixing the green chilli, mint & coriander paste nicely add ½ tea spoon garam masala powder in it.
Garam masala powder is optional. After mixing the garam masala powder nicely with the vegetable mixture nicely place lid over the pan & cook. After 1 minute if we remove lid from the pan, the mint has released nice flavor and vegetables got cooked nicely.
Now we need to add the water in the mint & vegetable mixture. For 1 glass of basmati rice add 2 glases of water. We have added 1 glass of water at the time soaking rice, hence add soaked water and another glass of water.
After mixing the water nicely, place the lid over the pan, turn the flame to high flame and boil the water. After 2 minutes if we remove the lid from the pan and see the water will be boiling. Once check if sufficient salt is there or not.
If salt is not sufficient then add little salt in it. Mix it nicely till the salt gets dissolve in the water. After mixing the salt add the soaked basmati rice in the boiling water. After adding the rice, mix the mixture carefully.
place the lid over the pan and cook it nicely. After 2 minutes remove the lid from the pan mix it carefully. Place the lid over the pan and cook by turning the flame to medium flame. After 5 minutes if we remove the lid from the pan the rice got ½ boiled.
Now once again mix the rice. We should not mix the basmati rice too much. If we mix too much the rice will break into small small pieces. Place the lid over the pan and cook the rice by turning the flame to low flame.
After 3 minutes if we remove the lid from the pan the water has almost got evaporated. And the basmati rice has also got cooked nicely. Now mix the basmati rice once carefully. We can see slight moisture in the rice.
So again we need to cook the rice for 2 minutes till the moisture gets evaporate over the low flame. After 2 minutes if we remove the lid from the pan and see the pudina(mint) rice got cooked perfectly.
Now switch off the stove. That set the so tasty pudina rice got ready. Take the pudina rice in a serving plate, garnish it with pudina(mint) and serve it. Pudina(mint) gives lots of benefits to our health.
Pudina(mint) increases our digestive system. Pudina(mint) being of different flavor generally the children wont like it to eat. Instead of preparing Pudina(mint) churney etc if we prepare pudina(mint) rice the children will like to eat.
