Do you want me to show you how to make this beautiful baked peach with mascarpone and caramel sauce in like 15 minutes? Better stick around. All right. Today we are going to make some awesome baked peaches with mascarpone and a delicious caramel sauce.
Some simple ingredients we have here. I’ve got three peaches, a thing of mascarpone cheese. This is just like an Italian cream cheese. It’s not as rich as like regular old cream cheese in the store. It’s got a lighter kind of profile.
Um, so keep that in mind. I’ll tell you why here in a bit. I’ve got some heavy cream, a mix of Stevia and sugar and salt and butter. That’s what we’re going to use to make the, um, caramel sauce. And then I’ve got some vanilla bean paste.
You can also use regular vanilla and I’ll show you how this all comes together. All right. I have washed my peaches. I have my oven on 400 degrees. It’s gonna heat up while we’re doing this. I’m just gonna slice these in half and remove the pit.
So I’ve got a paring knife. I’m just gonna run it around the edge. And then we’re going to cut these in half. Here’s the dealio, my peaches, aren’t a hundred percent, ripe because it is early June. Um, but that’s fine because they bake up in the oven.
If I can just get the damn thing apart. Alright, I have my peaches, the pit removed. They’re cut in half. The more ripe these are the easier the process will be. Um, if they are, you might have to work at it a little bit if it’s not like super soft.
So we’re just going to put these on a baking sheet that’s lined with parchment paper and I’m just going to put them face down and we’re going to put them in the oven for like 10 minutes while we make up our filling.
So we’re going to pop these in the oven. Okay. So we are going to put this together. Like I said, I’ve got vanilla bean paste. You can use just a teaspoon of vanilla and I’ve got the mascarpone cheese.
Whenever you, um, if you’re a taster, I don’t know, are you a taster? Let me know in the comments. Um, but if you are a taster, this is not going to be what you’re used to. It’s going to be really, um, it’s going to taste kind of mild and bland.
Trust me with the recipe. It all comes together. So of course, you’re welcome to do whatever you want. It’s your life. But trust me on this, I’m just going to pour a little bit of this paste in here. This is awesome.
I got it on Amazon. If you buy a full vanilla bean, it’s like stupid expensive, but you can get this vanilla bean paste. I got this off Amazon for like $8 or something and it’s lasted months. So I’ve got that vanilla bean paste.
I’m just going to stir it together and then we’re going to make our caramel sauce and it’s going to be so good. We’re going to make our caramel sauce. I am just making a little half batch here. So I have three tablespoons of butter, quarter cup, Stevia, quarter cup just granulated sugar mix.
So we’re going to start by turning this on to a low heat and melting our butter. So we’re gonna let that go and whenever you are making a caramel sauce, it is good to once your butter melts and you add your sugar and you want to continuously stir at that point.
So for now, we’ll just let this butter melt. So my butter has all melted, I’m going to add in my sugar mixture, just stir it in and continue to stir. So we’re just going to melt this up and it looks like nothing, but we’re just going to continue to stir.
Our 10 minutes is up. I’m going to check these. I’m just like squishing them down a little bit. They should be really soft. Um, these peaches were not like super ripe whenever I started. So I’m going to add another five minutes.
Um, the more ripe your peaches are, the less time you’ll actually have to bake them. So this process does take a minute. You can see that it just kind of gets all weird. It’s less weird if you just use straight sugar.
Um, it does do a little bit better, uh, but just keep stirring it. And eventually it’s going to turn like the color of a penny. [inaudible] Okay. We’ve been at this for about 10 minutes and finally it is starting to resemble some caramel here.
So when it reaches that color, go ahead and turn it off and remove it from the heat. And then we’re going to sprinkle in our salt and stir in our heavy cream. Okay. I removed this from the heat. It’s still very hot.
So I’m going to start in my heavy cream, cool it off a little bit… STEAMY, and I’m going to sprinkle in probably a quarter teaspoon of salt, just a little sprinkle will do . I may’ve got it a little hot it’s okay.
Caramely deliciousness. So that’s starting to chill out a little bit. Um, I have my peaches out of the oven. You can oops that one got a little flat. Um, but I’m going to flip those over and we are going to assemble these bad boys, and then it’s going to be like fruity peachy heaven here.
All right, let’s do it. So this is where the magic happens. Just kind of slide your thing under there. And you’ve got this beautiful, yummy peach. Then you can take your mascarpone. Careful, these are hot, but you just want to put a little bit in the middle there.
Alright. I don’t know if you can see how beautiful everything is, but this is one of my favorite desserts and it doesn’t like hurt that you can put it together in like 10, 15 minutes. It makes you look real fancy, even when you’re not.
