Black Bean Burrito Bowl | Vegetarian | Plant-based | High Fiber Recipe

Hello everyone, and welcome back to Hookom on Health! If you’re new here, my name is Amanda Hookom. I’m a Registered Dietitian Nutritionist and Certified Personal Trainer, and today I’m going to show you how to make my Black Bean Burrito Bowl with Cilantro Lime Rice.

This recipe is vegetarian, vegan if prepared without sour cream and cheese, plant-based, and high in fiber. It’s easy to throw together, packed with flavor, and sure to keep you satisfied. So let’s get started! Bring your brown rice and two cups of water up to a boil on the stove.

Cover, reduce heat to low, and simmer for about 45 minutes or until rice is tender and all of the water has been absorbed. Once your rice is cooked, fluff well with a fork to prevent it from clumping.

Then, stir in lime juice and finely chopped cilantro. While your rice is cooking, it’s time to prepare the vegetables we’ll need for this recipe. Chop your purple onion, mince your garlic, chop your bell pepper, chop your roma tomatoes, and chop your romaine lettuce.

Then, heat some olive oil in a skillet over medium-high heat. Add the chopped purple onion and saute for about three to five minutes or until onion is translucent. Next, add the minced garlic and saute for 30 seconds or until garlic is fragrant.

Finally, add the ground cumin, chili powder, ground black pepper, cayenne pepper, and black beans and saute for another three to five minutes or until the beans are heated through. Once your rice and beans have finished cooking, it’s time to build your bowl.

Layer the cilantro lime rice with black beans, bell pepper, tomato, and lettuce. Garnish with cheddar cheese, sour cream, fresh cilantro, and hot sauce and enjoy! If you enjoyed this video, please be sure to hit that like button.
