Diet pumpkin pie, contains no fat and no sugar, but is still delicious. Leftovers are a great snack or lunch containing a vegetable & protein.
Pumpkin Pie Recipe
8 oz. softened fat free cream cheese (optional)
1 can of pumpkin
1/4 tsp sea salt
1 cup of evaporated fat free milk or almond milk
1 Tablespoon vanilla
pumpkin pie spice to taste
1 tsp. cinnamon
Beat cream cheese add pumpkin, eggs, milk, and all spices bake at 375 for approx 40 minutes (I check it with a knife) You can bake it in small ramekins. I serve it with Foam (from whole foods).
