Hello friends welcome to Madras Samayal Today we are going to make Egg Fried Rice lets get started For best results we need to cook the rice perfectly Once the water come to boil, add 1 tbsp of oil to it.
also add required salt lets add rice – 1 cup basmati rice (soaked for 30 min) since we have already soaked the rice , it doesn’t take longer to cook Once the rice is 90% cooked turn off the heat and drain spread it on a plate to cool completely (prevent sticking) Now lets scramble the eggs Since it’s egg fried rice I am using 5 eggs today Heat 2 tbsp of oil and add the eggs required salt and pepper next lets saute the vegetables again heat 2 tbsp of oil add 1 tbsp of finely chopped Ginger 1 tbsp finely chopped Garlic 1 chopped Carrot Cabbage (1 cup) 10 -12 beans Cook for few minutes Do not overcook the vegetables – cook 90 % Now to this add 1 tsp of Chili sauce 1 tsp Soy sauce add required salt Mix well.
Now lets add the cooked rice and scrambled eggs. Mix it gently without breaking the rice. Finally add pepper powder (1/2 tsp) Garnish with spring onions and turn off the heat. That’s it our egg fried rice is ready to be served.
