This tikka masala mix is an easy homemade spice blend that can be used for the popular tikka masala sauce or curry or as a dry rub for vegetable kebabs and baked tofu. You can use this spice mix in our vegan tikka masala curry recipe which we shared in our previous video.
Whole spices, which you would need to roast, would undoubtedly yield a livelier and fresher spice mix. For this you would require a spice mill or coffee grinder to grind the spices to a fine powder afterward.
But using the powdered version of each spice makes it more convenient if you do not own a spice grinder. You’ll find the amount for each spice in the ingredient list. My version of the blend consists of coriander powder, paprika, which imparts the red colour and makes the dish appealing.
However, Kashmiri chilli powder presents an ideal choice for the tikka masala mix. The best varieties are bright red and less pungent lending a very vibrant red colour to the dish without too much heat.
If you can find Kashmiri chilli powder, you can use it instead of paprika. Other spices in this mix are turmeric, nutmeg, cardamom powder, cinnamon powder, ground cumin and ground black pepper. I am leaving out any hot chilli powder in this blend; you can add your own to taste depending on what you are using the masala for.
This blend makes about 3 tablespoons of spice mix which is enough for 2 curry servings. It also makes a nice rub for baked tofu or roasted vegetable kebabs. You can make a larger amount and store in air-tight containers for a few months.
I find making masala blends to be very agreeable. Not only does it give a personal touch to the dishes you are making but it also makes them very unique. For its symphony of flavours and aroma, tikka masala definitely beckons your own blend of spices.
