I take the shrimp heads and put them in a mortar I put aside some whole shrimp to decorate the finished dish I crush the heads I add 800 ml of water, I mix I pour it in a saucepan I boil it Then I cut the fire I filter the juice, it will give a very good taste to the dish I cut the onions into pieces I roughly chop the garlic I cut the peppers into chunks I cut the carrots into small cubes I shop the parsley I cut the cuttlefish into pieces I cut the chorizos in slices of one cm thickness I cut the chicken into pieces, you can also use thighs or chicken breast The mussels have cooled, I remove the shells I keep some with their shells for the decoration of the dish I filter the juice of the mussels, it will also give a good taste to the dish All the ingredients are ready, I can start cooking I put 50 cl of olive oil in a large paella pan heated on high heat.
The olive oil will make the rice smooth and tasty I put the onion and the garlic, I stir regularly for 1 minute I add the chicken and 1 tsp of salt, I don’t put too much salt now, because the juice of the mussels will also salt the dish.
I stir from time to time for 1 minute Then I put the carrots and half of the chorizos During the cooking, the chorizos will also release their taste in the dish I let it fry for 5 minutes, I continue stirring I add 1kg of rice.
I advise you to buy the rice with long cooking time, at least 20 minutes. If you take quick cooking rice, it will not have enough time to soak up the flavors. I put over medium heat, I stir for 2 minutes, then I add 1L of water, and the chopped tomatoes I mix I put the juice of the shrimps and the juice of the mussels I mix, I add half of the parsley The bay leaves that I tear a little bit to release their fragrance The yellow food coloring to give a nice color to the dish I mix I let it simmer for 5 minutes I stir regularly Be careful, during the cooking, no ingredients should stick to the bottom of the pan I add the peppers, I mix and I continue cooking for 5 minutes The rice begins to absorb the juice, I lower the fire a little Also, it is normal during cooking to add water At this stage, my rice is not yet cooked but all the juice is almost absorbed, so I add 50 cl of water and I mix I add the cuttlefish and the rest of the chorizos, I mix I continue to simmer for 5 minutes I put the mussels and the shrimp without heads, I stir for 5 minutes If the rice is not yet soft enough, I add another 30cl of water and I mix I regularly taste to check for the salt and to be sure that the rice is well cooked.
Otherwise I adjust and I prolong cooking for a few minutes if necessary. I add the mussels with shells, I mix I put the peas. The ones that I used are frozen and already cooked, so they are very tender, that’s why I add them at the end of cooking.
If you are using some fresh ones, you should add them at the same time as the carrots. I mix and I cut the fire I put the shrimps with heads on the top and I sprinkle with the parsley The Paella is ready! Accompany your paella with a glass of white wine.
