Namaskar. Welcome to nishamadhulika.com Today we are making a quick and healthy breakfast .i.e. Poha. Let’s start with the procedure of making Poha. Rinse the poha first for making this recipe. We have taken 2 cups of poha.
For making this we use medium thin poha. In market you will also get thick as well thin variety of poha. The thick variety of poha is used for making fried recipes whereas thin variety poha is used for making roasted namkeens which taste delicious.
We have cleaned the poha, let us now rinse them well. We don’t need to soak the poha, just rinse it well. So, immediately add water quickly that the poha is drenched well. Immediately drain out water from it and rinse the poha.
Drain out every drop of water from poha. Stir the poha like this with a spoon and add ¾ tsp salt or as per taste to it. Also add 1.5 tsp sugar to it. Mix well and keep the poha aside for 15 minutes. Stir the poha one more time at a regular interval with a spoon.
Poha will absorb water and will turn soft. Then use it for cooking. Keep it aside for 15 minutes. After 5 minutes, stir the poha like this so that you get fluffy and non gooey poha. Wait for 5 to 6 more minutes.
We kept the poha aside for 5 to 6 minutes, they are now ready to be used. Heat a pan with 1 tsp oil. We have ½ cup peanuts, sauté them for a while. Place the peanuts in pan and roast until they get crispy while stirring constantly.
You can skip the use of peanuts. But I prefer adding peanuts in poha. Peanuts are now roasted well and turned fragrant. Also you can witness some change in the color. Transfer the roasted peanuts in a separate bowl.
If you have roasted peanuts available then you can use them as well. Heat 1 to 2 tbsp oil in pan for making the poha. Then add ½ tsp mustard seeds or you can also use red mustard seeds as well. Let the seeds crackle.
The seed have started crackling. Reduce the flame to prevent spices from browning. Now add 1 finely chopped green chilly. You can add 2 green chilies as well if you desire eating spicy. If you are making this for kids, then skip the use of green chilies.
Add ¼ tsp turmeric powder and sauté for a while. We have 8 to 10 curry leaves, chop them roughly and add to the pan. You can skip the use of curry leaves if not available. Now add poha to the spices.
Mix well and cook the poha for 2 minutes. Poha is now ready, squeeze ½ lemon’s juice to it. Reduce the flame to minimum. Mix well and poha are ready to serve. Sprinkle some sev and peanuts over the poha, followed by some coriander leaves.
Place a lemon wedge on the side. Lip smacking and fluffy poha is ready. Making this is really easy. So whenever you are hungry and crave for something quick and delicious food then try making this poha and share your experiences with nishamadhulika.
