We’re looking for numbers that are above 32 degrees Fahrenheit so that it is no longer frozen. Next we’ll do something completely different and for that you’ll need two sandwich bags full of ice. We’ll clip the two bags together and gently lay them over the breasts of the turkey.

This will chill our white meat and our dark meat can start to warm up just a little bit. Let it sit like this for one hour and don’t worry it’s completely food safe. Then it’s time to remove the neck and bag of gizzards and then we can just toss these Now it doesn’t matter how you decide to season your turkey as long as you place copious amounts of butter underneath the skin and then we’ll season the outside of our turkey.

Give that turkey a nice massage and rub the spices in. Then it’s time to insert our ChefAlarm thermometer probe so we can keep tabs on the internal temperature of the turkey as it cook. We’re gonna insert the probe directly into the breast of our turkey parallel to the pan.

Then it’s time to bake this in a 350 degree oven until the internal temperature of the turkey breast reaches 155 degrees. You heard me right 155 degrees in the breasts. No need to open the oven door we’ll just turn on the alarm and wait until it goes off.

Looks like it’s time to pull it out and check. Let’s take a look Once again we’ll use our Thermapen to check an instant-read on the temperature of the meat. We’re looking for that perfect 155 throughout all of the layers and if we check over on our dark meats in the legs we’re looking for a perfect 178 Let it sit and rest for 20 minutes before slicing and serving.
