Namaskar and Welcome to nishamadhulika.com Today we will make kadai mushroom. Mushrooms are a vegetable that can be prepared instantly and is liked by young generation a lot. Let’s see what all ingredients are required for making kadai mushroom.
Mushroom – 8-10 Capsicum – 1 Oil – 2 tbsp Green coriander – 2-3 tbsp (finely chopped) Paste of 3 tomatoes, 1 green chilly, 1 inch ginger piece and 10-12 cashew nuts Red chilly powder – less then ¼ tsp Salt – more then ½ tsp (as per taste) Garam masala – ¼ tsp Coriander powder – ¼ tsp Turmeric powder – ¼ tsp Dry fenugreek leaves – 2 tsp Asafoetida – 1 pinch Cumin seeds – ½ tsp Make thin slices of mushroom like this.
Also cut capsicum and remove the stalk and seeds. Make medium size square pieces of capsicum. Turn on the gas and add 2 tsp oil. When oil gets hot add capsicum pieces and cook for 2-3 minutes until becomes little crunchy.
Now take them out in a bowl. Add rest of the oil in the pan as well. When oil gets heated add asafoetida, cumin seeds, turmeric powder and tomato-green chilly-ginger-cashew nuts paste and cook until oil starts floating on the surface.
Also add coriander powder, red chilly powder and dry fenugreek leaves. Masala is becoming greasy that means it’s ready. Now add mushroom, roasted capsicum, salt, garam masala and green coriander powder.
Cook the Sabzi for 1-2 minutes like this. Add ½ cup water to make gravy. Mix really well. Now cover the pan with lid and cook for 2 minutes on medium flame. Sabzi is ready and all spices are absorbed nicely in the vegetables and is smelling awesome.
