– Today on Low Carb with Jennifer, I’m going to show you how to make this super easy keto teriyaki chicken. We’ve got a quick one today, guys. I’ve got my keto teriyaki chicken. It’s a really popular recipe on my blog, and I could not believe that I didn’t have a video for it.
So here we are making this video. It’s going to be quick. A quick dinner whenever you need a quick dinner for your family. They’re going to love this. It’s so good. So I’ve got a really hot skillet. I’ve got it on medium-high heat, and I just put in avocado oil.
It’s ready to go. It’s already starting to smoke a little. So let’s add in our chicken. (pan sizzles) So this is two and a half pounds of boneless, skinless chicken thighs that we cut into bite-sizes pieces, and I’m cooking it in a hot skillet with a couple of tablespoons of avocado oil.
And you want your skillet to stay hot. And sometimes whenever you put chicken in your hot skillet and the liquid boils out of the chicken, and then your chicken’s not getting as brown as you want, I like to just move the chicken to one side of the skillet and tilt it and bring some of the liquid to the side.
And then I just dab it with a paper towel. Get some of that liquid out of there so your chicken can continue to brown. Just like this. I’ve got a lot of liquid in here, and I’m just absorbing it with a paper towel.
Just be careful not to burn your fingers. So now we can start making the sauce. So we’ve got nice color on our chicken. I’ve still got my heat on medium-high heat, so I’m going to start adding the sauce ingredients.
You could combine them all in a bowl, but I’m just going to add ’em all in the skillet. We’re going to add a quarter of a cup of soy sauce. (pan sizzles) And if you don’t want to use soy sauce, you could use coconut aminos.
That works just fine. We’ve got three tablespoons of Swerve brown sugar, and I’m really liking the Swerve brand of the brown sugar. It packs, it’s, I don’t know, I just really like it. It’s packable, it doesn’t have that cooling sensation.
It just has really good flavor. I’m going to add in some minced ginger. I like to use just that ginger paste from the grocery store. It’s in the produce section. That was one teaspoon of minced ginger, and I’ve got one clove of minced garlic.
I’m also going to add in a half a cup of water. (upbeat music) And a quarter of a teaspoon of xantham gum, and I just like to spread it kind of lightly on top so it mixes in a lot easier. So we’re going to let this boil and reduce, and it’s going to coat the chicken, and then it’s done.
This is a nice, quick 15-minute meal. If you’ve got some cauliflower rice in your freezer, you could put it in the microwave while this is simmering and you could have dinner ready to go. Just a have a look at that.
