Today I have easy south Indian recipe “ LEMON RICE ”. Lemon Rice preparation is very easy. We can prepare it in less time. INGREDIENTS FOR THIS ARE : 2 CUP boiled Rice 1 tsp Split Black Gram 1 tsp Split Bengal Gram 2 tsp Raw Peanut ½ tsp Turmeric Powder 6 -7 Curry Leaves 2 Dry Chillies 1 Big Lemon 1/4 tsp Mustard seeds 1/4 tsp Cumin Seeds 1 Pinch Asafoetida SALT as per taste Now for making Lemon Rice, put salt and lemon juice into boiled rice and mix it well.
I have taken only one lemon juice you can use less or more lemon juice as per taste. You can take 2 lemons, if you like increase sourness. Now salt and lemon juice has mixed well in boiled rice. Pour 2 tablespoon oil into pan.
When oil becomes warm then put cumin seeds into it and when its become slightly red then put one pinch asafoetida along with dry chillies and curry leaves and slightly fry it. Then after put split Bengal Gram, split Black Gram and Raw Peanuts, mix it well continuously then add turmeric powder into it.
Fry it on low flame till it become slightly red, don’t let it much red in colour during fry, otherwise it will burn.( so remember) Now pulses and peanuts are fried well at low flame. Now add boiled rice into it and mix it well.
After mixing well, garnish it with chopped coriander leaves and sliced green chillies. Now, tasty “LEMON RICE” is ready to serve.
