welcome to our new sessions of cooking with technology that is cooking with Phillips where each one of you can be super chef. Today we’re going to make Maddur vada you know this is another classic vada from south of India, for this we’re going to use rice flour, all-purpose flour and the semolina you know that is rava, so we’re going to take equal quantity of rice flour, equal quantity of all-purpose flour and equal quantity of semolina now we’re going to mix all of this but we can also add little bit of salt to taste think that should be good and we’re going to create a kind of a short crust dough so whenever you want something crispy you want to add some fat into the flour and mix it so it becomes nice and crispy so this vadas are going to be crispy so here I’m going to add ghee and mix this into a crumble kind of preparation so it looks like bread mixture.
In this we’re gonna add some chopped green chilli, chopped coriander, chopped curry leaf you know chili flakes you want you can also finely chopped coconuts and add some chopped ginger and if you want you can chop onions or even slice them small and add to this and first we’re going to mix this and now we’re going to add water and we’re going to make a stiff dough because as we discussed you want this to come out little bit crunchy so I’m going to add very little water and then make this into a stiff dough we’re going to let this rest for about 10 minutes after the dough is ready and we’re going to convert them into maddur vadas and fry them in this air fryer.
We’re going to preheat the airfryer at hundred sixty degree centigrade for around 3 minutes and here I’m just going to convert these dough into first into dumplings and then with your hand just shape it the way you want if you want little bit crispier you can have the edges thin otherwise you can make little bit roundel like this which ever way you want this should be good now it’s already preheated open this drop all this inside and preferably try and spread these pieces in such a way, with the rapid air they going to anyway separate out and it’ll be nice put them in and for around seven to eight minutes at hundred and sixty degree centigrade and your maddur vada will be nice and tasty, haha hundred sixty degree centigrade for first few minutes and then you can increase the temperature to 180 for another four minutes because these maddur vadas even when you fry in the oil these take little longer time than the regular vadas, this is all ready but these maddur vadas once they’re cooked you remove them out and you let them rest for two minutes and that’s when you try they’ll become nice and awesome and also another indication of that this is perfectly cooked this you can see that onions which are showing out they turn golden in color that’s when this is perfectly done i’m going to let it slightly cool down and then try it, I’m going to try one see there nice and crumbly and you know when you eat it it’s like a nice savory cookie also mm just perfect and very difficult to believe that we have not fried it in the oil, very easily you can make these things frying in the air fryer and they taste fantastic and the result is many times better than the actual frying in the oil, so guilt free and also very very tasty hmm nice ghee flavor, imagine If I have to fry this in ghee it would be way too expensive but the airfryer you can get nice tasty as well as much better results haha dip it in nice pickle, chutney, anything and they’ll taste good.
