Paleo SAMBAR (PALEO/LCHF)

Low carb diet… paleo diet…. missing my regular food..
Sambar is a tradtional lentil based curry of south Indian food. But in Low carb we do avoid grains and without lentils bring out the same texture and taste of sambar is very challenging. When I have tried that for the first time no one in my family found it. My daughter said the sambar today was very nice smell and tasty.

Lets see the Sambar recipe without any grains …

Preparation Time: 30 mins | serves 2-3 person
MACROS:
total calories: 224
Net carb(gm) 11.8 / Protein (gm) 2.2 / Fat (gm) 18.4

Ingredients:

150gm Pumpkin skinned and diced
1 medium size onion chopped
1 medium tomato chopped
2 green chillies halved
Salt

To temper:
2 Tblsp sesame oil ( gingelly oil) (cold pressed oil)
1/2 tsp mustard seed
1/2 tsp cumin seed
1 pinch asafoetida
2 sprig curry leaves

Instant sambar powder:

Mix in a bowl together
1/2 tsp turmeric powder
1/2 tsp chilli powder
1 tsp coriander powder
1/2 tsp cumin powder
1/2 tsp fenugreek powder
A pinch of asafoetida

Direction:
Add pumpkin, onion ,tomato, green chillies, salt and sambar powder in a pressure cooker with 250ml water.
Allow to boil until 3 whistles.
Then open the cooker and mash the mixture completely.
In a small pan heat oil.
Add all under temper into the pan.
Allow them to splutter and add it into the pressure cooker.
And boil for 2 more mins and off the flame.
Serve hot with cauliflower pongal/ paneer idli/ pongal or Dosai.

Note:

If you want to add any vegetable like drumstick, brinjal then boil the vegetable and add it into sambar.
