Tadjine Zeitoun or in English Chicken with Olives is one of the superstar staple dishes in North African cuisine. Today, I’m going to show you how to prepare this dish, Algerian style using olives, carrots and thyme.
👉 English
Chicken (about one per person)
1 large onion, chopped
4 large carrots, sliced
3-4 cloves of garlic, minced
3 TBS of chopped parsley,
3 TBS of chopped coriander/cilantro
180g – 1 cup green olives
Few sprigs of thyme
1/2 tsp white pepper (black is fine too)
2 tsp of turmeric or optionally saffron threads crushed
2 tsp Ras el hanount spice mixture
salt, olive oil, water
👉 En Française
Poulet (environ un par personne)
1 gros oignon, haché
4 grosses carottes, tranchées
3-4 gousses d’ail émincées
3 cs de persil haché,
3 cs de coriandre hachée
180g – 1 tasse d’olives vertes
Quelques brins de thym
1/2 cc de poivre blanc (le noir est bien aussi)
2 cc de curcuma ou de safran éventuellement écrasés
2 cc d’épices Ras el hanount
sel, huile d’olive, eau
Csirke (kb. Egy személyenként)
1 nagy hagyma apróra vágva
4 nagy sárgarépa, szeletelve
3-4 gerezd fokhagyma, darált
3 ek aprított petrezselymet,
3 ek apróra vágott koriander
180g – 1 csésze zöld olajbogyó
Kevés szelete a kakukkfű
1/2 tk fehér bors (v fekete)
2 ts kurkuma vagy opcionálisan sárgaréz szálak zúzva
2 ts Ras el hanount fűszer keveréket
olívaolaj, víz
