Oggi prepariamo un dolce di origine Est-Europea chiamato “Vatrushka” (Ватрушка). L’abbiamo farcito con la crema pasticcera e mirtilli.
Ha una consistenza molto morbida e delicata. E’ un dolce perfetto per iniziare la giornata!

Gli ingredienti:

per l’impasto:
– farina manitoba: 180 gr.
– farina 00: 180 gr.
– latte tiepido: 100 ml.
– yogurt intero: 90 ml.
– uovo: 1 pz.
– tuorlo d’uovo: 1 pz.
– burro a temperatura ambiente: 70 gr.
– sale: 2-3 gr.
– zucchero: 60 gr.
– lievito secco: 5 gr.

per la crema pasticcera:
– latte: 250 ml.
– uovo: 1 pz.
– zucchero: 30 gr.
– vanilina
– buccia di un limone grattugiata
– amido di mais: 10 gr.
– farina 00: 10 gr.

per le briciole:
– farina 00: 50 gr.
– zucchero: 25 gr.
– burro freddo: 30 gr.
– vanilina

– un uovo + un cucchiaio di latte per spenellare
– mirtilli (o altra frutta)

– warm milk: 100 ml.
– whole yogurt: 90 ml.
– egg: 1 pc.
– egg yolk: 1 pc.
– butter at room temperature: 70 gr.
– salt: 2-3 gr.
– sugar: 60 gr.
– dry yeast: 5 gr.

for custard:
– milk: 250 ml.
– egg: 1 pc.
– sugar: 30 gr.
– vanilin
– peel of a grated lemon
– corn starch: 10 gr.
– all purpose flour: 10 gr.

for the crumbs:
– all purpose flour: 50 gr.
– sugar: 25 gr.
– cold butter: 30 gr.
– vanilin

– an egg + a spoonful of milk to spenellate
– blueberries (or other fruit)
