What I Eat in a Day #2 (on non-fasting days on the 5:2 diet)
Which type of vitamin B12 is best–cyanocobalamin, methylcobalamin, or hydroxycobalamin?
Dr. Greger’s 2011 Optimum Nutrition Recommendations:
For cranberry sauce, try swapping the sugar out for dates. For the holidays, I blended 1 cup of water with 10 pitted medjool dates in my Vitamix. I added 1/2 tsp of cinnamon, too. Then I boiled this along with my bag of frozen cranberries until they split (about 5 or 6 minutes). SO YUMMY!
The non-cheese “cheesy” sauce for my mac ‘n’ “cheese”:
I use a red bell pepper instead of a green one to help give it a little more color. For the bread, I used Dave’s Killer Bread. It’s good, but it’s a little bit sweeter than some people might like. With the gravy that I made, though (see above), it’s absolutely delicious.
I added a couple of pinches of salt as well as soy milk and a little bit of corn starch to help thicken it (about 1 teaspoon, but you can eyeball it; the key is to constantly whisk once you’ve added of the corn starch). I also chopped the mushrooms up into really small pieces. It tastes like giblet gravy, but it’s a lot healthier for you!
